Chicken and Chorizo Tray Bake

(Total Time: 1hr 55 min| Serves 4)

Ingredients

Chicken thigh fillets – 8

Marinated kalamata olives – 180g

Sliced chorizo – 200g

Small rosemary sprigs – 6

Lemon cut into wedges -1

Instructions

Get the oven preheated to 1800C and then rinse the chicken and pat dry.

Place the chicken on a baking tray in a single layer alongside lemon wedges and the fresh rosemary sprigs.

Pour reserved olive marinade over the chicken and then pop it into the oven and cook for about 30 minutes.

Add chorizo and olives to the pan. Bake for 15 more minutes or until the chicken is well cooked through.

Serve with preferred salad, pasta or rice.
